How I Actually Make Crispy Hasselback Potatoes
- Scrub the potatoes. Place each one between two chopsticks or wooden spoons so you don’t cut all the way through. Slice thin cuts about ⅛-inch apart down the length.
- Put the cut potatoes in a large skillet or pan. Pour boiling water over them until they are mostly covered. Boil 8 minutes until the outsides start to soften but they still hold shape.
- Drain the water carefully. The potatoes will look a little floppy. Keep going.
- Return the skillet to medium heat. Add the butter and let it melt. Nestle the potatoes back in. Sprinkle with salt, pepper, and paprika.
- Cook 10 to 12 minutes, turning once, until the edges get golden and crispy. Add the minced garlic in the last 2 minutes so it does not burn.
- Sprinkle the chopped green onions over the top and serve hot.
The butter smells rich when it hits the hot pan. You hear the soft sizzle as the edges crisp. The finished potatoes feel crunchy on the outside and soft inside.
