What You Need

You need a regular 6-quart slow cooker. Mine is the old black Crock-Pot I got at Target for $29.97 years ago. Still works.

  • 1 to 1.5 pound pork tenderloin (I grab the vacuum pack at Costco for about $8.47. Don’t buy the giant pork loin. Different cut and it takes forever.)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder (the cheap McCormick jar is fine)
  • ยฝ teaspoon onion powder
  • 4 tablespoons Land O Lakes butter, cut into cubes (the salted stick, not the whipped tub)
  • ยฝ cup chicken broth (Swanson box is $1.89 and works. Water is okay in a pinch but broth tastes better.)

Don’t swap the butter for oil. The whole point is those little melted pools that mix with the meat juices. And don’t skip the garlic powder. Fresh garlic burns and turns bitter in the long cook.

I once tried Italian dressing instead of the simple seasoning. Too sweet and the meat got weirdly soft. Stick with the dry stuff.

How I Actually Make Slow Cooker Pork Tenderloin

  1. Pat the pork dry with a paper towel. Sprinkle the salt, pepper, garlic powder, and onion powder all over. Rub it in with your hands. It looks dusty. Normal.
  2. Drop the seasoned pork straight into the slow cooker. No oil needed. Pour the broth around the sides, not on top.
  3. Stick the butter cubes right on top of the meat. Four good ones. I use half a stick. Okay fine, closer to three-quarters when I’m hungry.
  4. Put the lid on. Cook on low for 4 hours or high for 2 hours and 15 minutes. Check at the early end. The meat should pull apart easy with tongs. If it still feels tight, give it another 20 minutes.
  5. Lift it out onto a plate. Shred with two forks or just pull with tongs. Spoon some of the juices over the top.

The first time I made this I left it on low for 7 hours. Came out dry and stringy. I fixed it by setting a timer for 4 hours and checking early. Second try the butter slid off into the broth and I thought it was ruined. Nope. Just stirred the juices at the end and it was fine.

Smell is pure garlic and melted butter when you crack the lid. Sound is the soft bubble of the juices. Texture is that soft shred that almost melts when you bite it.
