What You Need
Grab a big sheet of heavy-duty foil. The cheap thin stuff tears and leaks. I buy the Reynolds wrap rolls at Walmart for $3.47.
- 1 pound raw shrimp, peeled and deveined (Costco bag, the 21/25 size, around $14.99. Don’t use the tiny salad shrimp or they disappear.)
- Half a red bell pepper and half a green one, sliced thin (I paid $1.89 total at the corner store. Skip the frozen mix. It turns watery.)
- Half a white onion, sliced into half-moons
- 4 tablespoons Land O Lakes butter, cut into cubes (the salted stick, not the tub. Trust me.)
- 1 cup of that jarred Alfredo sauce with the herbs already in it (Ragu or Classico, whatever is $2.49 on sale. Homemade is fine if you already have it but I never do.)
- Handful of shredded mozzarella, maybe half a cup (Kraft works. The fancy block is overkill here.)
- Pinch of dried oregano and black pepper
Don’t swap the butter for oil. The whole point is those little pools of melted fat under the shrimp. And don’t skip the onion. It sweetens up in the steam and balances the rich sauce.
I once tried Greek yogurt instead of the Alfredo. Disaster. Too tangy and it split. Stick with the jar.

How I Actually Make Cheesy Shrimp in Foil
- Tear off a sheet about 18 inches long. Lay it flat on the counter. Pour the Alfredo right in the middle. It will look like a sad puddle. Keep going.
- Scatter the pepper strips and onion over the sauce. Drop the raw shrimp on top in a single layer. They look gray and cold. Normal.
- Stick the butter cubes all over. Four big ones and a couple small ones in the gaps. I use half a stick. Okay fine, more like three-quarters when nobody is watching.
- Sprinkle the mozzarella and the oregano. Fold the long sides of the foil up and crimp them tight. Then fold the ends so nothing can escape. It should look like a silver burrito.
- Bake at 400 degrees for 14 minutes on a sheet pan. I set a timer because I always forget. When you open it the steam will hit you first. The shrimp turn pink and curl. The cheese is gooey and stringy. If the sauce looks thin, just stir it once with a fork. It thickens as it sits.

The first time I made this the foil leaked because I didn’t crimp hard enough. Sauce ran onto the pan and burned. I just wiped it up and ate the shrimp anyway. Second try I double-folded the edges. Fixed.

Day-two cheesy shrimp in foil is still good but the cheese firms up. Store the whole packet in the fridge. Don’t unwrap it. Reheat at 350 for 8 minutes right in the foil. Or dump it in a skillet over medium for 3 minutes and stir. Microwave makes the shrimp tough so skip that.
