  1. Grab a big metal baking tray. Lay the chicken thighs in a single layer.
  2. Scatter the potato wedges around and on top of the chicken.
  3. Add the diced tomatoes, red pepper slices, green pepper or beans, and minced garlic.
  4. In a small bowl mix the tomato paste, olive oil, salt, paprika, and herbs until it looks like a thick sauce.
  5. Pour the sauce all over the chicken and veggies. Use your hands to toss everything so it gets coated.
  6. Cover the tray with parchment paper or foil.

  2. Pull the cover off and bake another 15 minutes until the chicken is golden and the potatoes are soft.

The sound of the sauce bubbling when you take the cover off is the best part. Smell of garlic and roasted tomato hits first. Texture of the chicken is juicy if you didn’t overcook it.
