I made slow cooker pork chops last night and stood at the counter eating them with a fork straight from the plate. Steam still rising. Gravy dripping on my shirt. Didn’t even care.

- 4 tablespoons salted Land O Lakes butter, cut into cubes
- ¾ cup low-sodium chicken broth (I use Swanson, the blue carton)
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- Optional: 2 garlic cloves smashed (I skip them half the time)
The chops need that bone. Boneless dry out faster. Trust me. I tried boneless once and they tasted like cardboard.
Onions are non-negotiable. They melt into the gravy. If you try to leave them out the sauce has nothing going for it.
Butter has to be the real stick kind. Not margarine. Not the soft tub stuff. Real butter. The cubes melt slow and baste the meat.
Broth keeps everything from drying. I once used water. Big mistake. Bland. The Swanson carton is $2.47 at my Kroger and it lasts forever.
Salt and pepper are just for the top. Don’t go crazy. The broth already has some.

How I Actually Make Slow Cooker Pork Chops
- Dump the sliced onions straight into the bottom of your 6-quart slow cooker. No oil. Nothing. Just the onions. They will look like a lot. Fine.
- Lay the pork chops on top in a single layer. Sprinkle the salt and pepper over them. Don’t rub it in. Just sprinkle.
- Drop the butter cubes on the chops. Aim for one on each. They will melt and run everywhere. That’s the point.
- Pour the broth around the edges. Not on top of the butter. Around. You want the liquid under the meat mostly.
- Put the lid on. Cook on low for 6 hours. Or high for 3 and a half. I do low because the house smells better longer.

It will look weird at the 2-hour mark. The butter sits on top like yellow islands. Keep going. The smell starts as sharp onion then turns deep and rich around hour four. You will hear the slow cooker bubbling soft every once in a while. That’s normal.
When it’s done the chops pull apart with a fork. The onions are soft and brown. The liquid turned into this thin gravy that coats everything.
I burned a batch once by forgetting to add the broth. Dry as dust. Fixed it the next time by setting a phone alarm for the pour step. Also one time the lid was crooked and steam escaped. Meat dried on the edges. Now I check the seal twice.
Pull them out with tongs. Spoon the onions and gravy over the top. Done.
The texture is soft but still has a little chew on the outside. Perfect for stacking on a plate with whatever you have.

Day two these are still good. Not quite as juicy but close. Store them in a glass container with the gravy poured over. Fridge for up to 3 days.
Reheat in a 350 degree oven for 12 minutes covered with foil. Or microwave in 45-second bursts stirring the gravy between. The microwave makes them a little tougher so I prefer the oven.
I freeze the leftovers sometimes. Portion into bags with gravy. Thaw overnight then reheat the same way. They hold up better than most pork.

Do I need to brown them first?
No. I never do. The slow cooker browns the edges enough. Saves dirty pans and time.
